Zucchini Spaghetti

Today’s recipe is a recipe with vegetables, zucchini spaghetti, we can buy them like this (they are sold in many shops) or we can make them ourselves with a vegetable spiraliser.
We will steam them in the microwave in just 2 minutes.
It is a very light and quick recipe, so be sure to make it in 15 minutes.
We can vary the ingredients and without the prawns we would have a delicious and quick vegetarian recipe.

INGREDIENTS FOR ZUCCHINI SPAGHETTI

  • 1 zucchini
  • a handful of peeled prawns
  • a few mushrooms i used 3 large
  • olive oil
  • salt and pepper
  • 2 garlic cloves
  • 1 tbsp fried tomato
  • parsley and ginger

STEP-BY-STEP ELABORATION

1.Use a spiraliser to make the courgette spaghetti.

We can sauté them in a frying pan, although I prefer to steam them in the microwave. We will only need two minutes at maximum power, I will use a silicone case. Set aside.

3.Wash and slice the mushrooms.

4.Put a frying pan on the heat with a little olive oil and fry the two garlics at a low temperature just to flavour the oil.

Add the mushrooms to the pan.

5.They cook immediately. Then add the prawns and season with salt and pepper.

6.Garnish with a little chopped parsley and ginger.

7.Once it is almost done, add the spoonful of fried tomato and stir a little.

8.It is a very quick dish, add the courgette spaghetti to the frying pan, stir everything together and we can serve it.
