Watermelon Gazpacho

A refreshing summer recipe ideal for the heat and very quick to prepare, it is a variant of gazpacho, watermelon Gazpacho using the same ingredients but with the same amount of tomato and watermelon.
It has a more liquid texture than gazpacho due to the amount of water in the watermelon, and a slightly milder flavour.
We will need a blender or mini-blender, I am going to use a food processor.

Chopper I will use the food processor.


  • 500 g ripe tomato
  • 500g watermelon
  • 1 cucumber
  • 1 green bell pepper
  • half an onion or a spring onion.
  • 250 ml water better if it is cold.
  • salt to taste
  • 4 tbsp olive oil although the amount can vary since it is to taste
  • a little white wine vinegar quantity to taste.


First wash the tomatoes well and cut them into pieces.

Cut the watermelon and remove all the seeds.

Put it in the jug of the mincer or miniprimer. I will use the Monsieur Cuisine food processor.

Put all the vegetables into the jug.

Peel and chop the cucumber and put it in the jug, and do the same with the onion.

If you like, you can also add a peeled garlic.

Add the washed and chopped green pepper.
Add the washed and chopped pepper.

Close the jug with the measuring cup on and program 1 minute on speed 10, starting on speed 5 and gradually increasing it.

Open the jug and add the water, a little salt, olive oil and vinegar.

Close the lid and with the beaker in place ,we program again 1 minute, vel 10, to mix well and that there are no lumps.
Again we open the lid and taste the gazpacho so that it is to our taste of salt, oil and vinegar if necessary we rectify and mix a little.
With a turbo hit it’s already mixed.
Once finished, all you have to do is store it in the fridge until it is very cold.
Optionally, for those who like a very fine texture, you can strain the gazpacho. I never do it, I like it that way.


Although I have used the food processor, we can make it with any blender or mixer, in some recipes they also add 40 or 50 grams of bread.
This recipe is ideal for the summer like the traditional Gazpacho and I also recommend you to try the Crema de Puerros (Leek Cream) in the summer.
