Roast pork meat- Baked pork secret
The Pork Secret is a special piece with streaky fat that comes out very tender and when it is Iberian pork it is really very tasty.
Today’s recipe is very simple. We will cook it in the oven with a bed of potatoes and onion.
The first thing we will do is paint the piece of meat with a mixture of herbs, mustard and spices.
Ingredients: for two
A piece of pork named secret.
200 ml. of beer
Oil, salt, pepper.
For the mash it is to our liking and it can vary. I like to put:
2 garlic cloves, a little mustard, a little pepper, thyme, rosemary, salt, a little lemon juice, a teaspoon of coffee, and 4 tablespoons of olive oil.
We start by preparing the mash, put the solid ingredients in a mortar and crush to form a paste.
Little by little we are going to add the lemon juice, the mustard and the oil and mix it well to make it creamy.
With a kitchen brush we are going to spread our meat with the mashed.
Peel and cut the potatoes and onion, sliced potatoes and julienned onion.
In a baking dish, paint with oil and spread the potatoes and onion on the base.
Preheat the oven to 180 degrees heat up and down and if we have a fan we will use it.
Now we pour the beer over the potatoes and the onion, then we add salt and pepper, add the oregano and the rosemary. I have put the rosemary on a branch.
Finally add a little olive oil.
All that remains is to put the meat on top with the mashed meat and place it in the preheated oven.
We must watch that it does not run out of liquid in that case add more beer and also turn the meat so that it browns on both sides.
In my oven it has taken 35 minutes although this is variable.
