Pumpkin cake is a traditional autumn dessert in many countries. This cake is fluffy and has a sweet and spicy flavor, thanks to the pumpkin, cinnamon, nutmeg, and ginger.

  • 300 g pumpkin.
  • 200 gr. sugar.
  • 250 g flour.
  • 100 gr. butter.
  • 4 eggs.
  • 1 teaspoon cinnamon.
  • 16 gr. baking powder or baking powder.
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of ground nutmeg
  • 1/2 teaspoon of ground ginger

Preparation of Pumpkin Cake

  • Separate the yolks from the whites and reserve, then cut the pumpkin into pieces.
  • Cook the pumpkin pieces in the microwave or steam them until soft, then mash them well with a fork. We can also boil or bake the pumpkin, but in this case I cooked it in the microwave using a microwave.
  • n a bowl, mix the yolks with the sugar and butter. The butter can be melted in the microwave for a few seconds, which makes it easier to beat.
  • Mix the flour, yeast, and cinnamon together and sift. Place the mixture in a bowl with the previous mixture of yolks and sugar. Mix well. Add the pumpkin and mix again. Add ginger, nutmeg, and mix.
  • While preheating the oven to 170 degrees, set to top and bottom heat.
  • First, beat the egg whites until stiff peaks form. Then, gently fold the egg whites into the batter. Be careful not to overmix, or the batter will deflate.
  • The last step is to grease a pan with butter, add the mixture, and bake. In my case, it took 40 minutes at 170 degrees Celsius. To check if it was cooked in the center, I pricked it with a toothpick that I always use for cakes. If it comes out clean, it means it is already cooked. Turn off the heat, remove the cake, let it cool, and you have a delicious pumpkin cake.

  • o get a more fluffy cake, it is important to beat the eggs with the sugar until they are very fluffy.
  • It is also important to sift the flour, baking powder, and salt to avoid lumps.

  • To make a cake that is more moist, you can add 1/2 cup of natural yogurt to the batter. The yogurt will help to keep the cake moist and prevent it from drying out.
  • To make a chocolate-flavored cake, you can add 1/2 cup of chopped dark chocolate to the batter.
  • To make a coffee-flavored cake, you can add 1/2 teaspoon of instant coffee powder to the batter.
