How to Prepare this Classic Dish with Irresistible Sauce

Cod in pil pil sauce is a dish that requires few ingredients but stands out for its unique flavour.
Ingredients to prepare pil pil cod
- 4 garlic
- 2 pieces of desalted cod.
- olive oil
- 2 chillies
- Let’s start with the cod. Make sure you desalinate it properly by following the supplier’s instructions or by soaking it in cold water for 24 hours, changing the water several times. Once desalted, cut the cod into pieces of the desired size and pat dry with paper towels.
- The next step is to peel and slice the garlic.
- Now put the olive oil in the frying pan, a little hot, and add the garlic and chilli peppers. Remove it from the pan, brown it a little but not too much and put it aside on a plate.
- Now, with the oil slightly warm, we are going to confit the cod, first with the skin side up for about 5 minutes, then we will turn them over and cook them for another 5 minutes or so with the skin side down, always at minimum temperature. When candied at a low temperature, you will see gelatine balls form.
- Then remove the cod to a plate and turn off the heat, leaving the oil to cool down for a while. The key to this dish is the pil pil sauce, which is obtained by emulsifying the olive oil with the cod juices.
- Now that the oil is cooler, it is time to bind the sauce with a strainer using circular movements. This will help to emulsify the fish juices with the oil and achieve a creamy, silky texture.
- Serve the pieces of cod with the pil pil sauce on top and garnish with the browned garlic and the reserved chilli pepper. This time I have accompanied the cod with some slices of microwaved potato with salt and parsley, it is a quick and healthy recipe. I hope you like it.
