Panellets Traditional Catalan Recipe

Panellets are a traditional Catalan recipe. They are small sweets in various shapes made of marzipan, almonds and pine nuts with a great tradition in Catalonia, the chestnut is also the star of this festival (festivities of all saints and “la castañada”) that we can taste along with the roasted sweet potatoes accompanied by a glass of typical muscatel sweet wine.

Very simple to make, ideal for preparing with the kids in the house.

In today’s recipe we will prepare the panellets dough with sweet potato, which is sweet and thus we can do without a little sugar, but another option is to prepare them with cooked potato (this version is the one I like the least) and also prepare them with marzipan al 50% sugar and almond flour.

INGREDIENTS for Panellets

  • 250 gr ground almonds or almond flour
  • 250g sugar
  • 250 g oven roasted sweet potato
  • lemon zest
  • 1 egg
  • pine nuts to decorate
  • whole almond to decorate
  • almond to crocanti to decorate
  • grated coconut for coconut
  • cocoa for chocolate
  • soluble coffee for coffee
  • confectioner’s chocolate to coat the chocolate
  • cherries in syrup to decorate the cherry ones

STEP-BY-STEP ELABORATION

1.Roast the sweet potato in the oven and reserve it.
2.Mix the sweet potato with the sugar crush it with a fork, add little by little and mix the ground almonds and the lemon zest, a compact mass should remain.

3.Form a ball. This dough is kept in the refrigerator covered until the next day (minimum 6 hours).

4.The next day, take the dough and form small balls. Some will go with battered pine nuts, others with almond pieces, others battered with coconut and with coconut mixed in the dough. Others with a whole almond in the center. Others with cocoa in the dough and coconut batter.

5.Coat the balls with egg white so that the pine nuts and crunchy almonds adhere more easily to the panellets dough. We will do this in the pine nut and almond panellets.

6.We will reserve some balls to mix them with the soluble coffee and we will shape them into coffee beans.

7.The cherry ones we will put a candied cherry in the center and we will press a little.

8.Arrange on a baking tray lined with baking paper.

9.Now we will paint the panellets already in the tray with beaten egg.

10.Put in the oven preheated to 170 degrees until they are well browned.

11.Some chocolate, already cold we will give them the melted chocolate bath.
