Codfish Recipe

This is a delicious codfish recipe with a sauce made from oil, garlic and paprika. After cooking in the oven, it can be served with white beans or without them.

The name of the recipe is bacalao a la llauna (canned cod), due to the container in which it is made, which gives the recipe its name. It is a traditional Catalan recipe.
The cod must be desalted or we will have to desalinate it ourselves by changing the water 2 to 3 times during 24 hours.
Once it has been desalted, it should be drained.

INGREDIENTES CODFISH

  • 1 piece of cod per person this recipe serves two people
  • 3 cloves of garlic
  • olive oil
  • 1 level tablespoon of red paprika
  • parsley
  • flour to coat the cod
  • 100 g cooked white beans
  • 1 dash of white wine, optional

STEP-BY-STEP ELABORATION OF CODFISH RECIPE

1.First we must drain the pieces of cod well, then we will dredge them in flour.

2.Put a frying pan on the heat with oil and when it is a little hot, fry the pieces of cod so that they are slightly browned on all sides. The amount of oil should only cover the loins halfway and it should not be too hot.

3.Place the cod on a metal baking tray, called a llauna, which gives the recipe its name, or any other baking dish you may have.

4.Peel and slice the garlic and fry it in the same oil in which the cod was fried at a low temperature, taking care not to burn it. Add the paprika and fry very lightly so that it does not burn, add a splash of white wine and allow the wine to reduce.

Turn off the heat of the frying pan, this last step of the wine can be omitted and cooked without wine (it is still very good).

5.If we are going to prepare the recipe with white beans, we will have them cooked and set aside during the whole process. We have previously boiled them with salt and a bay leaf.

6.Preheat the oven to 180 degrees up and down.

7.In the llauna or dish where we have reserved the cod, add the white beans and sprinkle with the oil sauce, paprika and garlic. Add the chopped parsley on top.

8.Now bake in the oven for 5 minutes with the dish covered with aluminium foil.

9.Plate and serve piping hot.
