An ideal recipe for an aperitif and a very healthy snack.
Anchovies are a fish that must first be frozen in order to be consumed safely and avoid anisakis.
On this occasion I froze them when I bought them and they have been frozen for several days.
After several days I defrosted them and this is where the recipe begins.
REST IN THE FRIDGE

Wash the anchovies thoroughly under running water, remove the guts, the head, the central spine and the tail.
They will be divided into fillets.
We are going to put them aside in a container or on a tray where we can later pour the liquid that we will prepare.
Now we prepare a mixture of water, vinegar and salt.
The proportion is three parts vinegar to one part water and add a spoonful of coarse salt.
Pour this mixture into the tray where we have reserved the anchovies, they must be completely covered, cover them.
Put the anchovies in the fridge for around 3 to 4 hours.
After this time we will see that they have changed colour and are whiter.
Remove the anchovies and place them in a bowl with olive oil, garlic and chopped parsley.
Keep them in the fridge and in a few hours you can eat them, they are delicious.
